So I tried the baked oatmeal again. I doubled the recipe for my 6 quart crockpot and only cooked it for 2 hours on low, and then let it set for an hour (lid off). It turned out much much better. I would probably cook it even a tad less. Yum.
i'm dying to try this, but the oats we have are a hearty blend of several grains and none of them are instant. DId you use "real" oatmeal? It just doesn't seem like 2 hours on low would be long enough to cook it. I've learned to trust you though....just wanted to make sure. Also, does this make a ton? If I double it, 6 cups seems like A LOT!
Flori - I used old fashioned oats. I was surprised that it cooked as fast as it did. It does make quite a bit. I cut it into bars, and they were quite thick, so I cut the bars through the middle as well. I keep them in the fridge, and the leftovers lasted us a week. I use them for breakfast once or twice (just for Boo and I) and for snacks when we are on the go. If you have a 4 quart crockpot, it should cook okay with the normal recipe. But I just have the 6 quart, and doubling it worked great. My crockpot cooks VERY fast, so yours may not cook as quickly. That was a scrambled answer, I hope everything made sense. Oh, one other thing, we are used to less sugar in things, so I thought these were plenty sweet, but you may want to consider increasing the sugar, depending on your kids' eating habits.
