Love these sweet potatoes

I am baking my holiday pies and cleaning the house today! Usually I'm not a fan of cleaning, but when it is to get ready for company, somehow it is more fun. And baking pies is always fun (although I cheat sometimes and don't make my own crusts).

I wanted to post my sweet potato recipe, even though a few of my family members have already turned up their noses at the suggestion of my yummy side dish. We had these sweet potatoes at a law school get-together a few years ago and Jeremy's classmate was good enough to share her recipe.


Sweet Potatoes

12-15 servings

6 large sweet potatoes

½ cup butter

1 ½ cups white sugar

½ cup brown sugar

1 tsp ground cinnamon

1 tsp ground nutmeg

1 tsp vanilla extract

salt to taste


Peel and slice the sweet potatoes.


Melt the butter in a large pot and add sliced sweet potatoes.


Mix sugar, cinnamon, nutmeg and salt. Coat the sweet potatoes with this mixture. Cover the skillet, reduce heat to low and cook for about 40 minutes until the potatoes are soft and mashable (I might have made that word up).


Stir once in a while as they cook.


Stir in vanilla right before you serve.


**I usually put in less sugar than the recipe calls for and it's still nice and sweet.

  1. I don't really like sweet potatoes, but Pam made some killer sweet potatoes a few years ago and every where I take them I make sweet potato lovers out of everyone. If you cook them right, they are better than the rest of the meal. Lisa
