Pumpkin Chocolate Chip Cookies

I made these for our Halloween party last night and they were super easy to make and turned out well. The original recipe called for a 10 minute cooking time, but 11 minutes was better for me. If you want to be healthy, you can substitute applesauce for the oil and add a TB or 2 of flaxseed meal.


Pumpkin Chocolate Chip Cookies


1 c canned pumpkin

1 c white sugar

½ c vegetable oil

1 egg

2 c all-purpose flour

2 tsp baking powder

2 tsp ground cinnamon

1 tsp nutmeg

½ tsp salt

1 tsp baking soda

1 tsp milk

1 TB vanilla extract

2 c semisweet chocolate chips


Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, nutmeg and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.


Add vanilla and chocolate chips.


Drop by spoonful on greased cookie sheet and bake at 350 degrees F for approximately 11 minutes or until lightly brown and firm.
